Their purpose is to destroy the unwanted hydrogen to prevent it from gumming up the works, not to make the most efficient use of the hydrogen for power generation. If the generators stop, your SPOM will stop working, and thus you don't produce oxygen any more. I don't entirely agree.

Then you don't need to bother with running out of power or hooking up your electrolyzers to the main power line (means less stress on it and more you can spend elsewhere).
